Sober eggs on drunken toast

I came back one night after a few drinks and decided to make bread. I can’t write the recipe as I only mixed dry yeast, water and different flours and let it sit in the fridge until the following morning. The utter joy when I woke up and realised all I had to do was to put it in the oven to bake and whip up some eggs.

For the eggs, melt knob of butter on low heat in a pan. Finely chop a couple of small shallots and add to the pan, cook for about 7 minutes. Add 4 eggs and let them scramble slowly. Just before the eggs are done add peas, salt and pepper and some butter and a few strokes of a really good parmesan.

I didn’t even toast the bread as it was fresh out of the oven, I simply added the eggy pea scramble and finished with some additional parmesan.

Hangover gone.
