Red chicory with whipped blue cheese
Last little dish on my NYE spread, this is incredibly easy to make and takes about five minutes to knock up. Perfect for any last minute guests, a snack or as a part of a spread. Gluten free too if that matters. You sort of have to eye this one and taste based on your preference of strong cheese flavour or not but base it on the below.
Ingredients
4 big chicory, red or white
150g strong blue cheese
1/2 dl creme fraiche
Method
Take apart and rinse the chicory so you have beautiful individual leaves. Let dry
Mix cheese and creme fraiche in a stand mixer or use an electric whisk and whip for 5 minutes.
Plate the leaves and cheese dip on a platter and serve
