Baked figs with blue cheese, candied walnuts and Zaatar

Fool proof little snack, starter or even dessert that goes a long way. Feel free to swap the cheese. Goats cheese and figs are a classic combo, or perhaps a truffled cheese. Nuts can be swapped too. I have seen bakeds figs with parma ham but I think it’s a brilliant vegetarian option. I love really strong, smelly cheeses so I would always go for the strongest blue/goats cheese. 

Ingredients

  • Cheese of your choice, in this case blue cheese

  • Fresh figs

  • Olive oil

  • Candied walnuts

  • Zaatar

Method

There is no need to measure things. Trim and simply score a cross in the fig but careful not to score through, drizzle with a little olive oil and pop the tray in a 180 degree pre heated oven for 8 minutes. Remove the tray and add a healthy chunk of cheese in the cut and put back into the oven and bake for another 7 minutes or until the cheese is melted.

Once baked, scoop the juices over the fig (best bits!), add the sweet candied walnuts and a good sprinkle of sumac.
