Growing up in the Swedish countryside has had a big influence on the way that I think about food. My mother grew all of the vegetables we ate as children, meaning seasonality was super important. This was a sentiment echoed by all of the chefs I trained under when I first went out into the culinary world of work, and is fundamental to my thought process every time I cook.
The thought of having my own business gnawed away at me for years until finally, I had the courage to go out on my own in early in early 2020. I find inspiration everywhere, from places I eat, to places I have been lucky enough to visit, markets, social media, the list is endless and always growing. This is reflected in my cooking with seasonality at itβs core but flavours from all over the world (occasionally with a Swedish touch, of course).
