Kebabs

Who doesn’t love kebabs?? For these spiced kebabs I used a mix of beed and pork mince but works just as well with lamb or chicken. If you don’t have a bbq you can stick the skewers under the grill in your oven too.

Makes 6 portion sized skewers

Ingredients

1000g mince (I used 50/50 beef and pork)

2 finely chopped onion

3 finely chopped cloves of garlic

A handful of flat leaf parsley, chopped

2 tbsp of kebab spice mix (see recipe below)

Salt and pepper

6 metal kebab skewers or soaked wooden skewers

kebab spice mix

2 tsp salt

1 tsp black pepper

1 tsp coriander seeds

1.5 tsp fennel seeds

2 tsp cumin seeds

1 tsp chilli powder

2 cloves

1 tsp mild paprika powder

1 tsp sumac

1 tsp cinnamon

Using a pestle and mortar or a spice grinder, bash up/grind all spices to a powder.

Method

  1. Start with making the spice mix.

  2. Add all ingredients to a big bowl and mix well.

  3. Press the mince onto the skewers, the mince needs to stick to the skewer so no air is trapped inside. Leave to rest for a few hours in the fridge.

  4. Lightly brush a small amount of oil on the meat and bbq the kebabs until they are nicely charred and cooked through.

  5. Serve with flatbreads, different dips and a crispy salad.
