DIPS
Here are some super easy dips that you cannot go wrong with anytime of the year and are delicious with everything. I always get asked about dips (probably because I force them on people). Anyway, make sure you have dunk friendly items on hand such as flat breads, veg sticks, salad leaves, grilled veg, meats or fish. Or just a spoon if you are as greedy as me. The recipes below are more or less staples in my house and the best bit is that you can change the recipes endlessly to your preference.
White bean hummus
Ingredients
1 tin of white beans
1/2 dl tahini
1 garlic clove
1/2 tsp ground cumin
1 lemon - zest and juice
1/2 dl oliver oil
salt and pepper to taste
Smoked paprika and parsley for garnish
Method
In a blender, everything except the olive oil and garnishes, mix until you have a smooth paste. Drizzle on in the olive oil, if the hummus feels too thick simply add a little cold water whilst mixing.
Transfer the mixture to a bowl or plate, drizzle with some olive oil, finely chopped parsley and smoked paprika.
Zhoug (Yemeni chutney)
Ingredients
40g coriander, stalks too
30g parsley
30g dill
30g mint
1/2 tsp cumin, ground
1/2 tsp cardamom, ground
1 tsp sugar
2 garlic cloves
2 green chillies
1/2 dl olive oil
Method
Mix all ingredients but olive oil in a mixer or blender. Mix until a paste and drizzle in the olive oil.
Add salt and black pepper to taste
Smashed feta
Ingredients
1 pack of feta
1/2 dl of zhoug
Method
Mix it all and plate. That’s it! If you want to be a little fancy drizzle some good olive oil on top.
Harissa dip
Ingredients
1 small tub of harissa
3 tsb honey
1 msk vinegar
Method
Mix all in a pan and bring to a boil. If you don’t think the balance is right add a little more honey or vinegar.
